Handcrafted in small batches in Huntsville, Alabama, Irons One carries on the distinction of producing Alabama’s very first bourbon. A legacy built on patience, precision, and respect for the craft.
After we finish aging our bourbon and whiskey, our barrels usually move on. But for our friends just down the road in Decatur, AL at J&L Ranch, we do something special - we share a barrel. They fill it with their incredible local honey, allowing it to absorb the character of the whiskey. When the bourbon barrel finished honey is ready, the honey soaked barrel comes ready for one final purpose.
We fill that honey barrel with whiskey, one last time, creating this honey barrel finished whiskey. Rather than overpowering the spirit, the finishing process allows the whiskey to gently pull nuanced characteristics from the barrel itself. The result is the smooth character Irons One is known for, enhanced by soft honey notes that bring warmth, depth, and balance to every sip. The honey influence is present but restrained. Never sweet, always refined, complementing the whiskey rather than competing with it.
This final finish reflects what matters most to us: thoughtful partnerships, purposeful processes, and letting quality speak for itself.
